Eggs, Butter & a Little Controlled Chaos
Our First Encounter with French Classics – Crêpes Suzette & French Omelette
2 November 2026
French cuisine has a reputation for being elegant, precise, and just a little pretentious. So, we decided to start with two of its classics – French Omelette and Crêpes Suzette. Nothing too complicated at first glance. Eggs, butter, pancakes. What could possibly go wrong?
Well, turns out there were quite a few possibilities.
From the very beginning, our participants were more than enthusiastic. Some confident, others a little nervous, but everyone was ready to get their hands on those pans.
And here's where we'd like to share something about the way we like to teach.
We're not big believers in standing behind every participant and rushing to save the day at the first sign of trouble. Of course, we demonstrate, explain, and help when needed. But sometimes, we let things go wrong.
Because you can hear ten times how hot your pan should be, but burn your butter just once, and suddenly everything makes a lot more sense.
So, we scrambled some eggs. Fished out some eggshells. Burned some butter. And tried again.
The French omelette turned out to be quite a bit more demanding than it looks. That fine line between the perfect texture and regular scrambled eggs was crossed a few times. In both directions.
But with every attempt, the movements became more confident, the pans a little more cooperative, and the omelettes started looking more and more like what we had in mind.
Then came the sweet part.
Crêpes Suzette. Or how to add a little fire to an already eventful day.
We made the crêpes, worked on the orange sauce, and eventually reached the flambéing stage. There were flames, there was excitement, and thankfully, everything stayed exactly where it belonged – in the pan.
And the result was absolutely worth it.
And since we believe good performances deserve a mention, a special shoutout goes to Kaloyan Nikolov, who managed to prepare everything perfectly on his very first attempt, completely independently and without any help from us.
Not that we're keeping score, but if we were, Kaloyan would be pretty high up on the leaderboard.
So, how did it all turn out?
Everyone managed to prepare and enjoy two French omelettes and a beautifully plated Crêpes Suzette dessert.
There were mistakes, plenty of successful attempts, and enough butter to fully justify the French theme.
But the best part was that, by the end of the class, everyone walked away with more than just recipes. They had gained a real understanding of the techniques they had learned through their own experience.
And for us, that's exactly what these gatherings are all about. Cooking, experimenting, occasionally messing things up, and eventually sitting down together to enjoy what we've made.
A big thank you to everyone who joined us for this class.
Until next time. And don't worry if your first omelette doesn't turn out quite right. That's what the second one is for.
